Chocolate Almond Thumbprint Cookies

These super easy and super delicious cookies are bound to be a hit! They come together in a snap and only take 10 minutes to bake! Give them a try!
Ingredients:
- 1 cup almond meal
- 1 egg
- pinch salt
- 1 tbsp coconut oil
- 1 tbsp cinnamon
- 2 tbsp sugar
- 2 tbsp whole wheat flour
- chocolate bits, chocolate chips or chococlate bar broken into small segments (dark, preferably)
Directions:
- preheat oven to 375 degrees F
- line a baking sheet with parchment paper
- combine all ingredients until they form a thick, slightly sticky paste
- roll the dough into balls (slightly smaller than a ping-pong ball) and place onto baking sheet
- press each cookie with your thumb to flatten them out slightly
- bake for 10 minutes and remove from oven
- while cookies are still hot, place a small piece of chocolate in each thumbprint (it will promptly melt)
- let cool for 10 minutes
- enjoy!
